Spinach Quiche




It's been a long time since I last baked a quiche.  And since I bought some cheddar and mozzarella  from the baking store a few days ago, I decided to bake a spinach quiche for a friend of mine . My dear friend Mathilda who is also Jo's godmom ,  loves anything with cheese and since Piggy gal is going to visit her the next day, I decided to make one for her to take along as hand gift. You know, I was actually very tired that night after rushing through my work project but becoz I promised my Jo I will bake one for her to take to Mathilda who is her godmom, I started to make the quiche only at 11.30pm and finished baking it at 2am...do you believe it , I couldn't get up the next morning and I had to apply for emergency leave. Gosh , there goes one day of my precious leave. But worth it coz , this quiche turned out delicious. I made two, one for Jo's  godmom and one for ourselves :))
I used the same  Loraine Quiche pastry and changed the fillings to spinach instead of bacon bits and onions ;p .  I love this crust..it was the nicest crust I ever had . :)) Do try this quiche crust and you will know what I mean ;p  haha I was amazed how much energy I still have left after working through my work project to bake these quiches....err supermom or what , I have no choice for I had promised Jo that I will bake the quiche for her . She loves her godma very much...haha I will never be jealous of that coz her godma loves her very much so it is only natural that Jo loves her much too :))  Don't worry , my baby loves me very much too lol!



this is one great quiche to savor...cheddar and mozzarella cheese goes  well with spinach ( ' poh choy ' in cantonese )

Spinach Quiche


Ingredients:

For the crust

100 gm grated cheddar cheese
120 gms plain flour
120 gms butter ( melted )
For the filling

3 large eggs
80 ml fresh cream
200 gm spinach leaves - blanched , cut into 1" length and drip dry
40 gms grated cheedar cheese
120 gms grated mozzarella

Method:

1.Preheat the oven to 200 ̊ C



2.Mix the grated cheese with the flour , add the melted butter and knead it into a ball

3.Grease the 9” tart pan with a detachable bottom .


4.Put the dough in and press till the whole tart pan is lined with the dough.

5.Beat the eggs together with the fresh cream , add in the mozzarella cheese, grated cheddar cheese and spincah to the egg mixture and mix together till well combined.

6.Pour the filling mixture on the crust and spread out evenly.

7.Bake the quiche for 30 minutes or till evenly browned. Leave to cool for a few minutes, then serve with salad of your choice.

    I used to make this almost twice a month. ;0 I usually make it with salmon or Asparagus...really yummy. ;) I guess the challenge would be not getting a soggy crust base..yours looked good. ;) Thanks for refreshing this recipe.

    Hi Sonia....oh if you have not tried making quiche...then you really must try this out..the cheddar crust is a winner alright. Fillings you can make mushrooms, asparagus or bacon. Your children will love it I am sure.

  13. Hi James...yup you are so right..even secret recipes doesn't have it. At times when I am too lazy to bake one, I wish I could get a really good one from the bakeries or cafes but so far none in Ipoh that is good. Home baked ones are still the best :p Haha I will bake one for you one of these day okay...since I am quite free these day :))
