Pancetta Wrapped French Beans


A few stalks of french beans snuggled in a shawl of pancetta!  Mmmmm delicious ! This is so simple to make.   Drizzle some olive oil on them and bake till the pancetta are crispy browned and the french beans are cooked . Serve this as a side and you will have your family Wowed !   A simple post today , for my joints are still aching....I will be taking a rest from cooking for a few days :)   Hopefully I will be okay for the CNY reunion dinner.  I hope to be able to cook some nice dishes for the Piggies this coming CNY :)

Light And Easy Pulled Chicken Porridge/Congee





























I have not been exactly feeling on top of the world of late....my perimenopause symptom of joint pain was quite unbearable, thus not up to cooking anything elaborate.  I cooked  light and easy pulled chicken porridge for Wild Boar and myself.  Yea, I actually hates porridge unless it is seafood porridge :p  but this turned out simply delicious.  Most important , it does not need much  washing.  With WB's help, I managed to cook this to perfection :)  Slurrp..................

Pan Fried And Baked Beef Patties


Wild Boar has been craving for patties especially beef patties !  Talking about eating more veggies this year LOL!  The family loves beef .  I have a piece of beef cut meant for stir fry with ginger and spring onions but since the craving for patties is so  strong. I took it out and chopped them coarsely . Patties are easy to make. Just add in chopped red onions, basil leaves and some pepper and salt and you will have the best patties for dinner :)  You must be wondering why pan fried and baked at the same time...well , I pan fried it first then placed the patties on a grill pan and baked them in the oven for a  few minutes  The baking process will help drain off excess oil.

Fresh Mushrooms Fritters


























I love eating shrooms either stir fried or deep fried as fritters.  I have tried many fritter recipes but this concortion is the best. I read this batter recipe from one chinese magazine and have while reading the recipe, I knew the combination of 3 different flours would give a great crisps and crunch to mushrooms.  I decided to try it for our New Year Eve's dinner and gosh , it was darn good :)  The mushroom fritters was crispy and crunchy on the outside and chewy moist on the inside. Until the last piece disappeared, it was still crispy and crunchy .  Beautiful batter that I must share here with you guys :)   Dont just gawk at it..go try it out yourself to believe every word I write here :)  Read on for the batter recipe.

Homemade Cream Of Mushroom Soup


I made Cream of Mushroom Soup to go with the roasted pork rack  :)  I googled and found one that I know will turn out fabulous and will surely wow the family :)  I used fresh white mushroom for this soup.  And the spices and herbs used in this recipe are my favorites too.  It is so simple to make and tasted delicious ...so this recipe goes into my to keep list.   Now the family can enjoy homemade ones instead of out of the can which has a lot of preservative in it.  We can control the amount of cream used.  Whatever , this is one recipe that I will reuse again and again.  The bay leaf and thymes makes it fragrant :) Read on for the recipe.

Oven Roasted Pork Rack - Main Dish































Okay, to make Wild Boar happy ,  more work for Elin , we decided not to dine out for our New Year Eve dinner . I was hoping to paint the town red with him but he hates crowd so can forget ab . I decided to serve the carnivor WB  his favorite , to bye bye  a wonderful and happy 2012 and a toast to a better 2013.....yea his favorite...Roast Pork Rack .  Joshua my Piggy boy bought herbs rubs and steak seasoning for me when he was in UK :) so,  time to use the seasoning for the pork rack  .........................

A Wonderful Meal To Usher In 2013 :)




























I prepared the most wonderful meal to usher in 2013 .  I roasted my relative's rack ( pork rack :p )  as the main dish and a lot more mouth-watering sides :)   The Piggies had their relative's rack roasted for dinner ....to kick start the new year LOL!  Will tell you more about the dishes that I prepared in my next few posts despite having sprained my arm muscles .   No resolutions made for this year except that I will continue to serve the Lord and cook more good food for the family and hopefully be able to continue taking good food pictures :)
