Minty Honey Roast Chicken Wings

If you are bored with the normal marinade sauce for roasts, do try this minty honey marinade for your roasts. I never knew that sometimes laziness can help create a great sauce for marinating chicken. Weekends especially on a Sunday, I will be too lazy to cook anything elaborate...eating out would be great :p but when you think of the crowd, you would rather cook something simple and eat in. And that was what I did.  Some store bought  mint sauce , honey and rock salt blend together......a refreshing marinade sauce for my chicken wings. It turned out great- trust me ...minty flavor with a tinge of sweetness and the aroma filled the air when the oven door was opened....MmmmMmmm delicious minty honey roast chicken wings for dinner ! :)  A simple yet easy to prepare roast wings and paired it with either a bottle of chilled red wine or a mug of chilled beer.....anyone? :p

Oregano & Calamansi From The Garden

I have been busy with too many things in my life lately that I have neglected my plants ...oOh..I feel so guilty for gardening has been my No1 hobby before blogging took over :(  Yesterday I took a look at my plants and  I found that most of my potted plants are dehydrated due to the hot weather the last few months and the leaves are drying and turning brown..Ooh so sinful of me to have neglected them....but I found some plants are blooming well...haha so I felt much better. The oregano plant which I bought some time back, hidden among my athriums aka 'naughty boy' plant , was growing well and my calamansi plant was full of fruits and waiting to be harvested :)) .  I discovered that the garden snails have eaten up my italian parsley and my rosemary has dried up totally....oohhh for I have not been cooking with parsley the last one month !!!! sobz sobz :(

Gertrude of My Kitchen Snippets gave me many packets of herb plants seeds like lemon basil, italian parsley, chives, oregano, dill and many more when she came back last CNY and I have yet to find the time to plant them. Thanks Gert for those packets of seeds  :) I will sow the seeds when I  re organize the garden after Jo flies off...I will have more time then :p

A Fun Nite Out With Claire @ Olivenz Cafe, Medan Ipoh

Last night , Claire, Jo and myself had a wonderful time dining at Olivenz Cafe in Medan Ipoh and just us ladies coz Daddy couldn't make it  :) So, it turned out to be a ladies' nite out for us three. We chose Beacon Point but unfortunately for us, it was their rest day, so we went to Olivenz instead. It was a quiet nite and we had a nice time chatting and laughing the whole night long. No one can be sad with Claire around. She makes us laugh with her funny experiences in life and her blogging and we had a wonderful time together as Jo would like to have some time with Claire before she goes off next Friday.

*Thanks Claire for your wonderful presence there last night. The food tasted better with you there :) Let's do this more often :)

Golden Enokitake Chicken Roll

I still have a packet of enokitake left in the fridge after the stir-fry and I thought it would be a great idea to use them in chicken rolls. This is a very tasty and flavorful chicken roll with a brush of american mild mustard sauce for extra flavor. Rolled together with enokitake , carrots and bacon chips....and coated with panko and oven baked...truly a satisfying chicken feast :)) Dipped it with wasabi...and I am on cloud nine for a moment ! I am a die hard fan of wasabi and I really can't live without wasabi :p  Can be served as finger food or a main dish with rice.

Stir Fry Enokitake With Chicken Breast Fillets And Carrots

A very simple stir fry dish lately for I am too busy to think of more elaborate dishes :) I have been on  a week's leave just to spend more time with my Jo and I am desperately grasping for more time with her ...I guess every mom will feel the same in my position. We do things together ....she is my teacher in many things and I am her best friend in many way...so you can imagine I have to tear myself away from her soon and it is going to break my heart...I wish time will stand still for now..... sorry, I am lamenting again :p Nay, with skype what is the problem...none!  just that the time when I am sleeping she is awake and when I am awake she is sleeping or in class....so looks like I have to stay awake just to chat with her in the days to come.....

Back to this dish...enokitake in japanese  or paengi beoseot (팽이버섯) in Korean can be cooked in many different style...soup, tom yam, simple stir fry and as stuffing which I am going to share in my next post. But for the time being , it is this simple stir fry enokitake with chicken breast fillet and lots of carrots...a healthy simple dish that I enjoy !

Baby Baked Potatoes With Sour Cream And Chives

This is another recipe from  ' Relaxed Cooking With Curtis Stone ' It is baked potato with sour cream and chives.   " Baked potatoes just might be the perfect comfort food. In miniature, they become a great finger food, too. Cooking the potatoes on a bed ofsalt dries them out a bit and gives them  a fluffier, drier texture, so they can hold more of the good stuff like sour cream, butter, crispy bacon, grated cheese, or whatever tickles your fancy "  Excerpt taken  from Curtis Stone Cookbook.

Steamed Chicken With Dong Quai And Wolfberries

Time flies...this Sunday, Josh will going back to college to start his 3rd year in Business Studies and Joanna will be flying off to UK in two weeks time....gosh my babies will be leaving me soon and I have been cooking their favourites the last few weeks and trying to grasp as much time as I can to be together with them. I guess every Momsie will feel the same heaviness as I am feeling right now when they leave home for their further studies.  Pamper them as much as I can for they will be leaving the nest soon.

I know that Piggy gal will miss home cooked food especially this dish...Steamed Chicken With Dong Quai ( a chinese tonic herbs ) and Wolfberries.  Asian Momsies are worrisome lots :)  I have been boiling herbal soup for them during this semester  break so that they stay healthy and fit :)

Pan Seared Lamb Shoulder With Special Sauce

Not wanting to join the crowds in the restaurant, the Piggies decided to have Mother's Day celebration dinner at home and the chef was none other than Daddy. The Momsie became the kitchen slave chef's assistant and endured the barks and calls  made the mashed potato , salad and buns. Well...since Daddy was so gracious enough to want to stand near the heat and pan seared the lamb just for me, I helped out with some side dishes for pan seared lamb  :p  I made  japanese mashed potato which was an instant hit with the Piggies and the potato buns which I will  later share with you in my other new blog which I will officiate it soon :p

Just to let you all know that I have decided to put all my bakes and desserts in the other new blog -Elinluv's Sweet Delights.  Meanwhile, this blog will be strictly for dishes I cooked for the family.  For now please drool what Daddy cooked for me and the Piggies on  Mother's Day here :))

Sakae Sushi @ KLCC Suria & ' Our Amazing Race ' Experience

I was in KL yesterday with my Jo , once again on a day trip to the British visa agency in Wisma MCA for her student visa....sigh...lots of paper work and documents for submission and we had so much problem and I tell you , we were like people in Amazing Race ...rushing from KL sentral to Ampang Jaya then back to Public Bank Head Quarters and rushing back to Wisma MCA and then back again to KLCC coz the bank in Ipoh gave us the wrong statement and we did not check the letter before we left Ipoh and lucky Daddy managed to call up the PBB head quarters  and ask them to re- issue the bank statement and we were rushing for time for they close at 3pm.... and for once Jo and myself experience what it was like to be in Amazing Race.  Fun and anxiety is not good for my heart at all !

Fresh Mushrooms In Cheese Sauce

Jo loves fresh mushrooms and cheese and what better way to cook both together . It was the best marriage for these two ingredients . The sauteed garlic add extra flavor to these two best matched cheese and shrooms :)  For me, this is the most adventurous match of two distinct flavor in my cooking experience . If you are a cheese lover and a shrooms lover you will woo by this dish. Eat it with garlic baguette or pita bread. It is delicious......a fusion taste of east and west!

Meaty Pork Ribs Chinese Herbal Soup aka Klang Bak Kut Teh

I have once again invited ' the wild boar '  Daddy to be my guest writer today. This has been long overdue but today he is in a good mood and he is willing to sit still and write this long over due post.  Last Sunday he played truant but I forgive him though. He vindicated his truancy by cooking this pot of deliciousness for the family. He will soon be spanked for playing truant on a Sunday !!!!  Labour Day is my rest day so Daddy can take over from here lol! Happy Labour Day To all :)
