Chunky Beets And Icy Red Onions - French Fridays With Dorie


















I love Fridays...two reasons - firstly it is the day that Chef Dennis will have his Guest Post Friday  for us on his blog - an introduction I look forward to and secondly ,  it is the day that I can post up my master piece based on recipes from Dorie Greenspan's lastest book Around My French Table . Since I have the book in hand, I decided to be a member of  French Fridays With Dorie and have fun with the rest of Dorie's fans.  Today's recipe is Chunky Beets & Icy Onions  :) and this is my much awaited salad....one word... Awesome !

















I am glad that I bought this book from BD and it is a treasure for me. With 300 recipes...french cooking from main meals to desserts...this will take me a few years to finish the whole book and by then I think I will be good in french cooking :)  Lucky for me,  my family loves western food and what more French food !!!  Ok back to this salad....it is healthy.beets being the main ingredient and the dijon mustard dressing is so good that I have been praising the dressing for hours till WB just have to shut his eyes and ears and let my drumming goes on LOL!


















This is the french dijon mustard that I used for the dressing..... and I will give you a tip on how to make the onions crunchy...a tip from Dorie - cut the red onions into rings , wash away the bitterness with cold water- first rinse after that soak the rings in cold water and ices and refrigerate it till needed.  I won't be sharing the recipe here - that is the first rule in joining the FFwD group .  Anyway do get the book if you love her cooking...you will not regret buying it.  For me , I love it absolutely and it has become a ritual to look through the recipes daily  :p  and drools before bed time :)


















This salad is can be served alongside  your grilled as side dishes and according to Dorie , this is not just a summer salad but can be served all the year round.  The fresh oregano is from my own garden....my pot of oregano comes in handy especially in french cooking :)  This salad taste even better if chilled.  Lovely salad!

  1. I have yet to learn to appreciate beetroots. I feel they smell like saw dust. Or is it that the beets I got are not good? You know, like how sometimes sweet potatoes got this weird "keroseney" smell if they are beginning to spoil.

  4. Wendy....yea got a slight smell but not that bad...wild boar doesnt like it much but it is so good for health :) and if you make them into salad with the mustard dressing..it is fantastically delicious. * yours may be a bit overly mature ,so the smell can be a bit ' keroseney' smell *

    Arthur...yea you should eat more meatless dishes :p good for you this beet salad :)

  6. Hello, Elin Your dish looks terrific. The fresh herbs on top give the finishing touch and flair. I'm a newcomer to French Friday's and I've had trouble in the past two weeks finding the link. The friendly Doristas who have commented on my blog( I have their links from the comments) have mostly put up their recipes so I have visited their pages this week. I'll keep checking back.

    Lena...haha yea all french cooking but they are all delicious :) Worth buying if you like western food :) I love it and no regrets buying Dorie's book. I have two of her books :p I am crazy over her tips and her cooking.. Simple and yet delicious. Buy her book you will love them all :)
