Stuffed Portobello With Leftovers



At times,  I just don't know what to cook and I will just look into the fridge and will be looking inside it for at least 10-15 minutes....believe me, I get cool air for a short 15 minutes :p  Trying to cook something nice out of whatever is left in the fridge is not easy at times. I can just gaze into the fridge yet cannot think of anything... I saw some portobello, some crab meat, some bacon chips , a small block of mozzarella cheese and some what not...haha then an idea just came to me. Why not stuff the portobello with whatever leftovers there are in the fridge. Why not ?  So , this is what comes out of them after 15 minutes of gazing into the fridge :) Stuffed portobello would be great for they are the most meaty compared with other mushrooms.  At times, I would like to make something without a recipe. No recipe food would be great at times :)


Chopped up a piece chicken breast,  diced bacon chips,  diced one quater piece of aubergine, diced shrimps, diced the mozzarela and crab meat. Mixed with one egg yolk, seasoned with white pepper and salt and I added some panko into the mixture. Stirred together till the mixture become sticky and hold together. Stuff the portobello with the mixture . Greased the baking sheet with olive oil, place the stuffed portobello on it and sprinkle extra japanese bread crumbs on the surface of portobello and baked in a preheated oven at 180C for 30 minutes or till crispy brown and cooked . Serve this as appetizer or as a side with a dollop of wasabi...yummm yummy.

bacon chips and mozzarella and oregano leaves from the garden :)


the yellow bits are diced mozzarella :p


sprinkle extra japanese bread crumbs on the surface and drizzle
with extra olive oil on top of each  stuffed portobello


baked in a preheated oven at 180C for 30-35 minutes
till it is crispy brown and cooked


the oozing mozzarella is a delight for cheese lover like me :p
the fresh oregano adds flavor to this deliciousness


this is the most delicious no recipe stuffed portobello :)


Stuffed Portobello With Leftovers


Ingredients

6 pieces of Portobello - wash and drain dry

leftovers from fridge

bacon chips - diced into small bits
a piece of a raw chicken breast -chopped coarsely
raw shrimps - diced into small bits
mozzarella - diced into small bits
crab meat
a quarter aubergine - diced into small bits
1 egg yolk
japanese bread crumbs

fresh oregano leaves
salt and white pepper
extra japanese bread crumbs - to sprinkle on surface of portobello

olive oil

Instructions:

  5. This will be a great party food. I too will do that especially toward end of the week. You will find a bit of this and that in the fridge. That is the problem of cooking for a small family :)

  15. Claire....you should look into your fridge mor often then you will have the inspiration on what to do with your leftovers LOL! the trouble you always peek into restaurant fridge :p

    Mary...thanks...hahah just take your leftovers , chopped them up and mix them well , then stuff them on the portobello or other vegetables available eg capsicum :)

    Anncoo...actually this is a lazy man's food. Throw whatever is leftover , mix them well and just stuff them into capsicum or mushroom :)

    Judy...yup it is so easy. Throw in the leftovers bits and pieces and assembled them as stuffing for mushrooms and pepperbells :)

  23. Elin, thank you so much for your response. I didn't see your reply earlier and I've used cooked chicken instead. so it was a bit dry. I will use raw chicken in the future.
