Pan Grilled Prime Rib End Pork Chops

Cooking for just the two of us can be quite brain taxing unless we eat out but Daddy is not game at eating out these days without his babies.  So most of the time we eat in . He is a meat eater and me basically loves just fish and veggies. But most of the time I will either char boiled or pan grilled some meat for him :) And to make thing easy, I pan grilled prime rib end pork chops with balsamic vinegar and mandarin  for the two of us with some side veggies...braised cabbage with balsamic vinegar and steamed sweet corn with a small dollop of butter. Mmmmm this made someone very happy ..this is one delicious pork chop that I know will be in the dinner menu from now on :p   This is what I cooked for dinner when I am  too lazy to cook CHINESE  :p and too lazy to wash up after dinner  LOL! All the food presented on one plate and these save washing and time....I am now watching a korean drama !!!  And Daddy will suffer from now on :p

I bought two pieces of prime rib end pork chops from the local butcher - Leong Sin Nam Farm and I normally buy from them if I ever wanted to cook something porky :p which is like once in a blue moon :) I prefer fish ...if you asked me. But for this once, I used  mandarin and balsamic as marinade sauce for the pork chops. Sprinkle enough salt on the surface of the chops. Mashed some mandarin slices and rub on the chops . This can be prepared a day before for busy people like me :p  Wrap with cling wrap and leave in the fridge until ready for use :)

pour olive oil onto the grill pan, heat the grill pan till the oil is hot,
place the marinated chops on it and pan grilled till the chops are cooked.
Add 1/2 cup or more of balsamic vinegar when the chops are ready
and using reduction method cook till the gravy has thicken .
Before taking it out , sprinkle chopped italian parsley
on the top surface of the chops .

I know someone loves this dish...
something different from the
usual style I cooked...thanks to Curtis Stone....
he truly inspired me with his style of cooking :p
simple and easy and yet delicious...I really love his cooking style :)

You can steam this sweet corn for just 20 minutes  ( I bought from Tesco )
I added 1/2 tespoon salted butter to it till well mixed
as serve as a side dish...yummy !

While pan grilling the chops , I prepared the braised cabbage on the other stove .
Stir fry the shredded cabbage with carrots shreds with lots of garlic and sea salt to taste.
Add 1/4 cup of water and simmer under low heat .
When ready , add 1 tbsp of balsamic vinegar and stir fry till well combined.
Easy does it and yet this is so delicious.

Balsamic vinegar is not just good for salad
but you will be surprised how good it taste
on meat....now I know what to do with
that bottle of balsamic I bought sometime ago :)

this is what I cooked for our dinner last night :)

  5. The pork chops look really good! I'm quite used to cooking for 2 now. If I cook Chinese, stews or braised stuff, I usually cook more and pack the leftovers for my hub's pack lunch.
