Crispy Egg Bits Bittergourd


















After all the good food we had during the Easter party...it is now time to eat something simple.  We had a scrumptious farewell dinner at Kok Tai Restaurant last  Friday and thereafter had a church Easter luncheon on Sunday after service.  I had a good time eating what I am not supposed to eat but who cares...eat first and sweat out later :p  , so for our sunday dinner we had something light. These bittergourd slices stir fried with eggs and lots of chopped garlic and chillies came to the rescue. 


















Simple yet delicious. I love bittergourd cooked in this style .  Not many people like bittergourd but for me and the rest of the Piggies , this is one of the favourite veggies we love eating.  Sometimes , I cut the bittergourd into cubes and cook them in chicken soup.  Healthy and delicious.  But for last night dinner, I stir fried them with eggs. This dish has no gravy...just stir fry the slices with grapeseed oil  till cooked , push aside, saute chopped garlic and chillies till fragrant, add in the eggs and fry the eggs till golden brown and crispy, push down the bittergourd slices and continue to stir fry till evenly mixed. Add in a dash of white pepper and sea salt to taste.  Simple as ABC..rite?  This is infact a lazyman dish :p but I so heart the crispy egg bits . They smell and taste good too !






Crispy Egg Bits Bittergourd 

Ingredients :

1 bittergourd - cut into thin slices, rub with salt and rinse after 5 mins, drain dry
2 eggs
2 tbsp of grapseed oil
3 pips of garlic- chopped
3 chillies - chopped
sea salt to taste
white groud pepper to taste

Method:

Heat grapeseed oil in non stick wok, fry the bittergourd slices till cooked, push aside. 

Add in the chopped garlic, chillies and saute till fragrant, add in the eggs and let it set , break up the eggs into bits and stir fry till crispy brown. Push down the cooked bittergourd and continue to stir fry till evenly mixed . Add sea salt and pepper to taste. Dish up and serve with hot rice.

  4. My mum cook this too, and her version is to cook it longer for a soft texture of bitter gourd.
