Oven Baked Quail/ Burung Puyuh

It is not often that I see quails being sold in Jusco.  Last weekend, I happened to see so many freshly slaughtered ones sold at RM3 per bird.   They look huge and meaty too, I bought two birds home just to test them out. If they are good, then on my next trip to Jusco , I will buy more.   My colleague will normally deep fried them but I was thinking I wanted something more healthier, thus I oven baked them instead.    They turned out delicious and the quails looked like it has been deep fried :)    Read on to see how you can get the skin crispy and yet tender and juicy on the inside without having to deep fried them.

the quails look huge and meaty

you can either cut the bird into half or as a whole,
marinade the quails for 1 or 2 hours with your choice of marinade ,
I used the store bought steak rubs which
Josh brought back from UK 

coat the bird evenly with potato flour

leave them at room temperature for 1 hour
 before putting them  into the oven to bake

I added some chicken wings for Wild Boar :)

  1. Bake means have to put aluminium foil ka?

    1. Kathy, no need to wrap the chicken with foil. Just bake exposed. But coat with potato flour, then let it dry at room temperature for 1 hour before you bake it. Place the chicken on the rack then bake, it will keep the skin crispy .

    1. Yea, yummy ! You must try. The birds are placed at the chicken meat chiller section near the japanese food .

    i love the squabs the chinese restaurant serves but they are deep fried and that's too much for my home so i love this bake idea and love quails!
    can i use corn starch?

    1. Liza, you can use corn starch but the crispness wont last. If you use potato flour, it will remain crispy for the duration of your meal.
