Pasta With Red Wine


















This is my first time trying out cooking spaghetti with red wine . Since I still have 1/2 bottle of red wine left in the fridge, I , being the creative one ( of course the family doesnt quite like to be the guinea pigs or my taster ) wanted to try this spaghetti with  red wine for our dinner  :p  Bought the red wine for cooking beef and when I saw this pasta with red wine recipe , I decided to try it out....



WB doesn't quite like it by I love it with my pan seared thyme salmon and potato salad...mmmmm yummy. WB said more like the salmon is the star than my red wine spaghetti LOL!  Seriously, I like it becoz I like new way of cooking pasta and this is one very refereshing way to cook spaghetti and it tastes good. Roasted some potatoes chunks with bacon bits and olive oil and it really goes well with the pasta and salmon.....aromatic and delicious pasta in red wine...mmmmm of course it is delicious ! A simple yet healthy dinner....don't you agree ?



































Pasta With Red Wine ( The Minimalist Cooks at Home by Mark Bittman from Chicago Sun Times )
Serves 6


Ingredients:
1/4 cup extra virgin olive oil
1 tbsp minced garlic
1 tsp red pepper flakes or to taste
1 pound spaghetti
salt and freshly ground black pepper

1 (750ml) bottle red wine , such as Chianti
1 tbsp butter


Method :

Bring a large pot of water to boil and salt it. Place oil, garlic and red pepper flakes in a large, deep skillet. Add pasta to the boiling water; turn the heat under the skillet to high. Cook the pasta as usual, stirring. As soon as the garlic begins to brown, sprinkle it with salt and pepper to taste and add three-fourths of a bottle of wine (a little more than 2 cups); bring to a boil and maintain it there. When the pasta begins to bend, (after less than 5 minutes of cooking) drain it and add it to the wine mixture. Cook, stirring occasionally, adding wine a little at a time if the mixture threatens to dry out completely. Taste the pasta frequently. When it is done, tender but with a little bite, stir in the butter and turn off the heat. When the butter glazes the pasta, serve it immediately.

  1. I've an open bottle of Irish Cream in the fridge - my missus' one. I wonder if I can use it for cooking...maybe beef. It smells very nice! I don't drink...

  3. I think this adds a layer of flavor to pasta, but I don't care much for its color. I make a dish very similar to this and I know Rachael Ray has one that she used when she was on Iron Chef with Mario Batali as her partner. I really like your recipe. Have a great day. Blessings...Mary

  5. Arthur....I have a bottle of Baileys Irish Cream too but I used it for drink in my coffee and my cakes and ice cream but I dont think it will go well with meat :) Try coffee with it...darn good :)

    Ann...that recipe is for 6 person so for you and Jeff,you can use less than 1/3 bottle would be enough adi :) but I tell you it is nice. Like what Mary said, it adds a layer of flavor to your pasta and make it different from other pasta dishes :)

  7. Mmm...I like red wine, infect I'm having a glass right now..heehee! But I never try to use it in any of my cooking before..except those xhao xin wine for chinese dishes.;p
