Quick And Easy Tuna Garden Pasta



















I find eating pasta much healthier than rice. Pasta are made from durum wheat , rich in protein and good for people who wants a low carb diet :) I read from somewhere that pasta is very low in sodium and non-egg varieties are cholesterol-free. One cup of enriched pastas provide an excellent source of folic acid and a good source of other essential nutrients, including iron and several B-vitamins. Good news for me too. I am trying to do away with rice for myself :)

Quick ,easy and effortless to whip up dinners are what I am looking forward to these days. Who say one dish meal is not appetizing ? :p Tell me this one dish meal is not and I won’t cook again :p Just kidding , not everyone likes pasta :) … this is one flavorful pasta dish that is so easy to prepare…infact for someone like me , this is a miracle dish whereby lots of nutrients can be found in this plate of pasta. Cherry tomatoes, french beans, canned tuna chunks in olive oil and a squeeze of lemon juice are found in this quick and easy pasta dish .



















Arriving home from work gives me great pleasure , my  ' four legged son ' Charco would greet me with much joy .  His whole body will be shaking with excitement , tail wagging hard – a body language that shows he misses me and welcome me home . I could not resist playing with him for while before I start cooking , I will tickles him and play catch with him and talks to him ( don’t think I am mad but dogs are good listener ) . I will throw him a leather bone and he will fetch it or I will say the word ‘ bone ‘ and he will search for it and bring it to me in his mouth. I just have to spend 5-10 minutes with him and I am totally de-stressed  :)  Dogs are men best friends.  I kissed his forehead and he will be happy running away to Daddy. Only after our routine playtime , will Charco leave me alone and allows me to walk to my haven kitchen . Why? Becoz he knows I will prepare his dinner for him ! A very intelligent dog ( a cross breed between a Rott and German Shepherd )

Ok , back to this pasta dish. I have half a packet of spaghetti left , I have to use them up fast before they expired on me . I take a look at what is in my fridge drawer, some french beans and cherry tomatoes are all I have and of course half a lemon…mmmm the brains start to conjure up a great pasta dish. Went to the pantry cupboard and see what canned stuff I have and found two cans of tuna in olive oil….. yesssss…..tuna in my pasta and throw in some french beans and tomatoes with a squeeze of lemon juice…yesss....yesss I this would be great for our dinner….a simple and easy to whip up one dish meal that is flavorful and complete with lots of greens !

Quick And Easy Tuna  Garden Pasta


Ingredients:


Spaghetti enough for two person – cooked till al dente

1 can of tuna chunks in olive oil ( Ayam brand )
20 cherry tomatoes – cut into halves
10 french beans –  cut diagonally into 1/8 inch strips
½ lemon - juiced
1 tsp of ground black pepper
3 tbsp of olive oil
6 pips of garlic-  coarsely chopped
1 tsp of sea salt

Method:

Cook spaghetti till dente in hot boiling water . Rinse over cold water. Drain dry.

In a non-stick  pan, heat up 3 tbsp of olive oil over medium hot heat . Saute garlic till fragrant but not brown, add in black pepper, french beans and tomatoes and stir fry for two minutes till the french are cooked. Add in the tuna chunks and the olive oil from the can and stir fry for 1 minute. Off the heat, add in the cooked spaghetti  and stir together  till well combined and serve hot.  Pour the lemon juice over the spaghetti only when ready to eat .

  6. Elin, this does look quick and easy... and healthy! Especially with all those vegetables.

    Totally know what you mean about dogs being so welcoming when we get home from work. My dog shakes her tail so hard her whole butt shakes! Sometimes she squeals with excitement.

  8. Sounds great! Reminds me of my fav tuna dish - Tuna Nicoise Salad. Although that has boiled new potatoes instead of pasta and has hard boiled egg and red onion in it and dressing.
    I will remember to make this!

  10. This is such a great meal. Easy to make, full of great flavor and healthy. Can't beat that. I actually prefer lighter pastas like yours over heavy sauced ones.
