Tofu,Corn, and Chive Fritter


























I love tofu and this is one great way to cook tofu.  Fritters !... who doesn't like them...I do and so does the  Wild Boar.  While surfing for a great way to cook tofu, I found one good one on Biren's blog and I have all the ingredients for this tofu fritters.   Thus making them for our weekend treat is not a problem...finger licking good dipped in wasabi....I can't ask for more...can I ?  LOL!  Wasabi.....my favorite hot dip !  Thank you Biren , for this addictive tofu fritter recipe :)  Love it !



























combine, corn, mashed tofu and chives and rice floor till well combined
add salt to taste

Tofu, Corn, and Chive Fritter - adapted from Roti n Rice


Ingredients:

12 oz (340g) extra firm tofu, well drained
2 corn yielding abut 1 1/2 cups (250 g) cooked corn kernels
1 oz 930 g chinese chives
2 tbsp  (16g ) rice flour
1/2 tsp salt
Canola oil for deep frying

Method:

Boil corn in a  large pot of water for about 7 minutes. When cooked, remove from pot and slice corn kernels from the cob.  Process tofu in a food processor until smooth.  Transfer to a bowl. Add corn kernels, Chinese chives, rice flour, and salt.  Mix until well combined.

Heat canola oil in a deep pan. Using two spoons, shape heaping spoonfuls of tofu mixture into balls.  Drop into hot oil and deep fry until golden brown.  Remove and drain on paper towels.  Serve warm.

  1. YUMMS!! i love tofu and chives, put them together into a fritter , totally irresistable. Looks like i wil have to break my self imposed rule of no deep frying ;P

  3. I can imagine how crispy they are! I love tofu but seldom fry them because too much cleaning to do after that. Maybe I should try this out after seeing your tempting pictures.

  9. My goodness! Look amazing!
    They remind me of pei-pa tofu - the ones shaped in a chinese soup spoon to resemble the old chinese "guitar-type" instrument. They are made from mashed tofu too!
