Plum, Avocado Salad With Balsamic Vinaigrette


















Thank you for all your get-well wishes and now I have fully recovered from a bad flu and now can be seen enjoying a good meal :)  After having eaten a scrumptious french style chicken meal ( M.Jacques Armagnac Chicken ) , salad of this kind makes me happy and guilt free for a second. Avocado is in season and this is the best time to add them to your salad.  Yea, salad makes me healthy and happy :)

















I threw into the salad bowl whatever fruits and greens I can find in the fridge, tossed in some toasted walnuts and added in hard-boiled eggs for protein and whisked up a balsamic olive oil vinaigrette dressing to go with it.  Simply healthy and delicious ! Balsamic vinegar is one ingredient I cannot do without :p  Love 'em in my salad and love 'em as dip for my ciabatta bread !

Slicing An Avocado

Cut the avocado in half lengthwise, twisting the two pieces to separate the halves. Tap the blade of your knife into the pit to lodge the blead in the pit. Twist the blade and remove the pit. With a large spoon , scoop out the pulp. Discard the pit and skin. Cut the aocado into 1/4 inch slices.

  7. My kids recently decided they love salads. This summer when our trees are filled with plums we will most definitely give this recipe a try.
