Yay! its FFWD again ! I am most excited by today's recipe...Salmon In A Jar...why? Coz salmon is my favorite fish and what more this preparation is so different from the rest. I have never tried pickled cured salmon slices in spices and herbs infused olive oil before....that is why today's recipe is most interesting. Dorie is brilliant and she has once again come up with such a delicious appetizer for us :) Thumbs up...the salmon was well flavored with the spices and herbs.
A beautifully flavored salmon appetizer to serve your family and friends who come for dinner. These can be done days ahead and serve whenever needed. The flavored oil can be used in your salad or pasta. So do not worry about wasting the olive oil.
The ingredients used are cured salmon chunks or fillet pieces ( curing process - rub sugar and salt into the salmon and leave in fridge for at least 12 hours - rinse with cold water and pat dry with paper towel before using ), red onions cut into rings, carrots into thin slices, thymes (I used rosemary ), bay leaf , black peppercorns , coriander seeds, olive oil.....that's it ...simple and easy to prepare appetizer :) Place all the ingredients in the glass jar and covered with olive oil. Make sure all the ingredients are submerged in the oil. Leave in fridge for 6 hours before serving.....easy to prepare and it such a flavorful salmon appetizer.
I make the potato in a jar too...this is same as making the salmon in a jar but with white wine vinegar or distilled white vinegar added to it. This is another to die for appetizer. You can serve this flavored potatoes as a side dish for your roast or add them to your veggie salad. I used my garden rosemary for this instead of thymes . Love the aroma of rosemary in the salmon and potato. A keeper for sure :)
