Gluten Free Almond Flour Carrot Cake

 

I have been wanting to bake a gluten free carrot cake. Not because I am on keto diet but just wanted avoid what flour as much as possible coz I am a Cancer recovered patient. Into my third year of being free from Cancer. Glory to God for healing and keeping me healthy this far.  I found a very good recipe which uses Almond Flour and since I have all the ingredients in my fridge, I proceed to bake it to have my craving fixed.  I substituted brown sugar with Lakanto and neutral oil with butter oil, the cake turned out great. Light and fluffy, raises up too , not compact . Perfect for my cake pan of 7 inches diameter. Having said that I halved the recipe.

Recipe from Mama Gourmand

Gluten Almond Carrot Cake

2 cups grated carrots

4eggs/ separate white and yolk

3/4 cup brown sugar ( I replaced with Lakanto)

1/2 cup sugar ( I omitted sugar)

2 tsp vanilla extract

1/2 cup / 109g oil ( I use melted butter)

3/4 cup pecans

3/4 cup shredded coconut

1/2 cup raisins

3.5 cups almond flour

1.5 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp mixed spice

My own Frosting recipe

226 cream cheese

2tbsp lemon juice

1 tbsp vanilla extract

2tbsp heavy cream

1tsp lemon ring for deco
