Roast Chicken With Nando's Lemon And Herb Peri-Peri Rub


























I didn't know that my Piggy Josh knows how to cook until he went to UK to finish his degree and when I see the food he cooks for himself on facebook that had me surprised :)   And the wonderful thing is, he knows what I love most...yea spices and rubs and teabags and a can of foie gras from France !  He said.. " mom, this is the cheapest :p  " and I told him , it is the thought that matters :)   What a thoughtful son...love my Piggies muchies.   Piggy Jo gave me birthday dinner and Piggy Josh all these seasoning rubs.....mmmmm I am blessed :)  I can't wait to use them all in my roasts and today I would like to share with you the Nando's Lemon & Herb Peri-Peri rub...........

A zesty blend of herbs ( Thymes, Oregano, Parsley and Rosemary ) , lemon and Peri- Peri ( African Bird's Eye Chilli) and dehydrated vegetables ( Bell pepper, Garlic, Onion) and black peppercorns, Pimento/ All Spice and Lemon Zest and Spice Oils.   A packet of this fragrant blend of peri peri rub is enough for a whole chicken or 5 chicken breasts.  Just rub onto poultry , fish or anything else and leave overnight in the fridge and it will be ready for grilling, bbqing or roasting.   I like the fact that it has no MSG, no perservatives, no artificial colors and no artificial flavors.  As you can see from one of the picture below, the ingredients are all natural in dehydrated form :)

I would like to use the Earl Grey for some cakes :)

























this is how the seasoning rub looks like....fragrant
and no artificial flavors, no msg, no perservatives
and no artificial colors :)

























rub the seasoning on the chicken and 

























put in ziploc or plastic bag
and keep in the fridge overnight so that the chicken
will be well marinated

























I love my grill pan which I bought from 100 yen shop :)  the chicken 
turned out so fragrant and crispy...
all the fat from under the skin dripped onto the grill pan

    Hmmm...no Nando's here. I think they have it in NZ. Perhaps I can pick up some of these there.

  2. Mmm... I love Nando's. So inconvenient to travel all the way to Aeon at Station 18 just to eat that. As your house is so much nearer, I'll come over ok??

  3. aiyo, looks so good. i feel like going to nando's for dinner now :). Yes, its the thought that counts, and of course the thought results in actions :) Your son is so sweet, he remembers what you like, buy them and save money. Mummy has done her job well :)

  4. Happy Birthday to you Elin! Am I late or early??? haha... Yeah, I think these are the best birthday present for momsie piggy. What about WB? iphone or ipad this year? hehe... Either, I think you will definitely have a fabulous time together. Enjoy & have loads of fun.
