Kimchi Jellyfish Salad



This is a simple to prepare Jellyfish salad. It goes well as a side for your grilled chicken or bbq meat.  I decided to use kimchi as a salad dressing and it blends in well with jellyfish.  This is so appetizing that I could just eat it alone with the grilled meat. Healthy and great appetizer.  I served it with grilled chicken for Wild Boar.  Too tired to cook anything elaborate.  Throw in some blanched enoki and some toasted sesame seeds.  I will leave it to you to imagine the taste of bland jellyfish with the awesome flavor of homemade kimchi :)  yummy good ! Wild Boar love it and I am not surprised at all
have it chilled before serving , it taste better
for me that is...your taste may differs from mine :p


Kimchi Jelly Salad

Ingredients

2 cups  jellyfish  - soak in water for 5 hours ( changing water often) and blanch in boiling water for 1 min - do not overcooked or it will be crunchy but leathery - drain dry
1 handful of enoki - blanch in boiling water for 1.5 minutes - drain dry
homemade kimchi to taste - about 1 cup ( a mixture cabbage and the kimchi liquid )
3 tbsp of toasted white sesame seeds 

1 tbsp of toasted white sesame seeds as garnishing

Stir all the ingredients together till well mixed except the garnishing.  Chilled in fridge till ready to serve. When serving, sprinkle the 1 tbsp of toasted sesame seeds on top as garnishing.  Serve as appetizer or as a side dish for the grilled chicken.
