Simple Roast Chicken - Pot Bless


















We had a pot bless/potluck dinner at the church last Saturday night.  To celebrate Parents' Day and every members will contribute and bring something for the dinner. As usual, I will cracking my head ...cook this or cook that dish...something different maybe....well...when the day came, I just chicken out of the ' mouth watering dish ' I was going to cook and instead  roasted the 3 halfs of chicken  hahaha :p   Simple roast may look simple in taste but if you know how to marinate them ...they will turn out great in flavor and be tasty too ! I love doing the sprinkling of different spices onto the chicken ...knowing it will be great at the end :)

















I got bottles and bottles of imported mixed herbs from Piggy Cuz...each time she travels to UK, she will bring back bottles and bottles of mixed herbs for me...yea I am that blessed :)  talking about her mixed herbs, I have never roasted anything for her so one of these days I am going to bless her with a roast chicken using her herbs :)  Cannot just keep receiving and not giving ...right?   First , rub salt , white pepper and thick soy sauce on the chicken. Sprinkle mixed herbs all over the chicken.  Then add in honey . Leave it to marinate for 2 hours , keep turning the marinated chicken over and over during the resting time for better results .  When roasting, arrange them on the rack with aluminium foil under the rack for easy cleaning later on.  Bake at 200deg C for 3/4 hours.  Tips : Cut them into bite size pieces when the roast chickens have cooled down completely or you won't have a clean cut :)

    Sonia....yea..mixed herbs is good for chicken, grilled fish, baked potatoes and even a dash of it on your salad will give your salad a wonderful flavor :)

  8. I love the color in your finished product! Whole chicken is on sale in my grocery store :) I may just have to make it.

    I love roasting things in the oven! It's a great way to free up your time and let the oven do the work for you!

  9. Piggy Chef Dennis...hahaha yea let her sending them to me...have to bribe her a bit by constantly giving her food with the mixed herbs added...that is one way to hint to her...right? LOL!

    I live In a Frying Pan....mixed herbs are magic portion to grills and salad :)
