Fried Brown Rice Vegetarian Style



Quick-fix meals are the best thing for me now ;p espcially I am so hooked on HK drama series..that's it...end of elaborate cooking unless the Piggies are back!. Thus pasta and fried rice have been served lately and since Daddy has not complained so be it. But not for too long , I will have to cook something more elaborate before he starts complaining! LOL

Actually it is not solely due to the drama series but I have been busy baking cakes for friends who are celebrating Christmas... pre Xmas parties in full swing. So eating simple like last night, fried brown rice with some turning ripe bitter gourd which has been sitting in the fridge drawer for almost a week :p So for a quick fix, I harvested some mint leaves from the garden and tada...a delicious vegetarian fried rice for dinner! I love mint leaves and bitter gourd in my fried rice. The taste is exotic...minty and bitterish LOL but a nutritious meal no doubt :)))

I still have a few cakes to bake in the next few days...2 fruit cakes and a carrot cake....poor Daddy! One dish meal for the time being but I will try my best to cook a better one dish meal for him...he is a mean meat man :) I do need a rest now haha....I still haven't baked any cookies yet...juggling between working full time and baking and cooking haha so Daddy please H E L P me by not complaining about the food being served lately...thinking back your food are well presented anyway :p


I love brown rice and the springy texture is
so suitable for fried rice :)


I also love coral lettuce....best as a side salad for the
fried rice !



Fried Brown Rice Vegetarian Style
( serves 2)


Ingredients:

2 bowls of cooked brown rice
2 pips of garlic - coarsely chopped
a fistful of mint leaves - washed and cleaned
3 small bitter gourd- sliced thinly
2 bird's eye chillies - sliced
1 tsp of sea salt
1 egg
2 tbsp of olive oil

Preparation:

Heat up olive oil in a wok and add in the garlic and saute till fragrant. Add in the sliced bitter gourd, chillies and mint leaves and stir fry till the bitter gourd are soft. Add in the cooked brown rice and continue to fry till well mixed. Add in the egg and continue to fry till the egg is cooked. Add in sea salt to taste. Dish up and serve hot.

    Hi Kenny...I have just finished watching ' Beyong the Realm Of Conscience' I love the storyline... now watching ' Born Rich' hahaha..Daddy will suffer for that :p
