Spicy Cucumber Side Dish - Oi-muchim 오이무침


























I love banchan - korean side dishes , simply because they are appetizing, healthy and delicious.  I have been visiting Maangchi.com for some ideas how to make appetizing banchan and I am happy I found a few that really inspires me to make them.  I have tried her spicy stuffed cucumber , it turned out to be a keeper :)  Now , this is the second cucumber side dish that I had tried out and it was absolutely tasty and every mouthful you can hear the crunch sound as you bite into the cucumber.

Easy to whip out and it is a great side dish to serve your guests.  Lovely side dish  to go with the smoked chicken and BBQ meat too.  Take note that it is best to make it and mix it just before serving so that the cucumber will remains crispy and fresh and preventing it from getting watery.

Spicy Cucumber Side Dish - Oi-muchim 오이무침 - taken from Maangchi

Ingredients: Serve 4

English cucumber (or 2 to 3 kirby cucumbers), washed
¼ cup thinly sliced onion
1 green onion, chopped
2 garlic cloves, minced
2 tablespoons soy sauce
2 teaspoons hot pepper flakes
2 teaspoons sesame oil
2 teaspoons sesame seeds
1 teaspoon sugar (optional)

Preparation:

1. Cut the cucumber lengthwise in half and cut diagonally into thin slices.
2. Put the cucumber into a large bowl. Add the onion, green onion, garlic, soy sauce, hot pepper flakes, sesame oil, sesame seeds, and sugar.
3. Mix it well with a spoon until the sugar is well dissolved.
4. Serve as a side dish for rice, noodles, or BBQ.

Beer Battered Anchovies


Finally, I managed to get the fresh anchovies from Jusco fish section, it is also known as Ikan Bilis Bought half a kilo back ! After cleaning them up, the guts and head goes to making Fish Amino Acid (fertiliser ) for the plants. This delectable finger food is a keeper.  Great accompaniment for chilled beer !  This is the second time using Pharmaskitchen 's Beer Batter.  The first time I tried his recipe was a few weeks ago ,using the silver baby pomfrets.  Now I can really taste his batter recipe using fresh anchovies.  Crisps and crunchy and flavorful !  Even the Wild Boar loves it, for a man who doesn't like to eat fish.  He ate the whole anchovy , the bones are crunchy too. Kruup kruup kruup and down it with a chilled beer. A must try recipe :) or you will miss something good!

Beer Battered Anchovies - adapted from Pharma'sKitchen

ingredients:-

12 Anchovies - remove head and guts
5 tablespoons of Rice Flour
2 tablespoons of Glutinous Rice Flour
1/2 teaspoon of Baking Powder
Salt
Pepper
Smoked Paprika Powder
1 can of Beer
Rice Bran Oil or vegetable oil

Preparation:

First, rinse and pat dry the fresh anchovies with a kitchen towel. Place the anchovies in a bowl and add some salt, pepper and smoked paprika to marinade them. Leave to marinade for 10-15 minutes.

To the bowl containing the anchovies, further add the rice flour, glutinous rice flour, baking powder, more salt and pepper. Lastly, a generous amount of smoked paprika powder and mix well. The flour mixture should be slightly red due to the paprika powder.

In a deep pan or a small frying pot, heat up some sunflower oil. While the oil is heating up, open your can of beer and pour about a quarter can of beer into the mixture. Mix well and add the beer in small amounts until the mixture is well incorporated into a thick but smooth batter. (You can always opt for water is you are do not have beer at home).

Check on the oil, and if the oil is ready, place the anchovies into the frying pot and fry until they are golden brown. Once golden brown, remove from the pot and place the anchovies onto a plate lined with kitchen towel to remove the excess oil.

Japchae 잡채























I have been wanting to cook this for a long time now. Japchae is sweet potato starch noodles stir fried with vegetables and meat and is one of Korea's best loved dish. Of course, it is often featured in Korean dramas and that's how I first got to know of this dish.  Seriously, my passion for korean food started when I was first introduced to korean dramas.  Finally, I get to taste my first Japchae , homecooked by your truly , of course  :)  

It is hard not to like the chewy ,sweet and slightly slippery noodles with colorful vegetables and mushrooms,  tender juicy  beef (grain fed ) , its irresistible sesame flavor , healthy amount of garlic , light and refreshing taste.  Awesome ! 

Each ingredient have to be cook separately because each requires different cooking time and care.  It may seems a lot of labor but the end result is a delicious Japchae that I will want to make again and again.  You can get the sweet potato starch noodles from Jusco .

Japchae 잡채 - adapted from Maangchi

Ingredients:-

4 ounces beef, filet mignon (or pork shoulder), cut into ¼ inch wide and 2½ inch long strips
2 large dried shiitake mushrooms, soaked in warm water for 2 to 3 hours, cut into thin strips
2 garlic cloves, minced
1 tablespoons plus 2 teaspoons sugar
2 tablespoons plus 1 teaspoon soy sauce
2 tablespoons sesame oil
1 tablespoon toasted sesame seeds
1 large egg
4 ounces spinach, washed and drained
4 ounces of dangmyeon (sweet potato starch noodles)
2 to 3 green onions, cut crosswise into 2 inch long pieces
1 medium onion (1 cup), sliced thinly
4 to 5 white mushrooms, sliced thinly
1 medium carrot (¾ cup), cut into matchsticks
½ red bell pepper, cut into thin strips (optional)
ground black pepper
salt
vegetable oil

Preparation:

Marinate the beef and mushrooms
Put the beef and shiitake mushrooms into a bowl and mix with 1 clove of minced garlic, 1 teaspoon sugar, ¼ teaspoon ground black pepper, 2 teaspoons soy sauce, and 1 teaspoon of sesame oil with a wooden spoon or by hand. Cover and keep it in the fridge
Make the egg garnish (jidan):
1. Crack the egg and separate the egg yolk from the egg white. Remove the white stringy stuff (chalaza) from the yolk. Beat in a pinch of salt with a fork.
2. Add 1 teaspoon of vegetable oil to a heated nonstick pan. Swirl the oil around so it covers the pan, and then wipe off the excess heated oil with a kitchen towel so only a thin layer remains on the pan.
3. To keep the jidan as yellow as possible, turn off the heat and pour the egg yolk mixture into the pan. Tilt it around so the mixture spreads thinly. Let it cook using the remaining heat in the pan for about 1 minute. Flip it over and let it sit on the pan for 1 more minute.
4. Let it cool and slice into thin strips
Prepare the noodles and vegetables:
1. Bring a large pot of water to a boil. Add the spinach and blanch for 30 seconds to 1 minute, then take it out with a slotted spoon or strainer. Let the water keep boiling to cook the noodles.
2. Rinse the spinach in cold water to stop it from cooking. Squeeze it with your hands to remove any excess water. Cut it a few times and put it into a bowl. Mix with 1 teaspoon soy sauce and 1 teaspoon sesame oil. Put it into a large mixing bowl.
3. Put the noodles into the boiling water, cover and cook for 1 minute. Stir them with a wooden spoon so they don’t stick together. Cover and keep cooking for another 7 minutes until the noodles are soft and chewy.
4. Strain and cut them a few times with kitchen scissors. Put the noodles into the large bowl next to the spinach. Add 2 teaspoons sesame oil, 1 teaspoon soy sauce, and 1 teaspoon sugar. Mix well by hand or a wooden spoon. This process will season the noodles and also keep the noodles from sticking to each other.
5. Heat up a skillet over medium high heat. Add 2 teaspoons vegetable oil with the onion, the green onion, and a pinch of salt. Stir-fry about 2 minutes until the onion looks a little translucent. Transfer to the noodle bowl.
6. Heat up the skillet again and add 2 teaspoons vegetable oil. Add the white mushrooms and a pinch of salt. Stir-fry for 2 minutes until softened and a little juicy. Transfer to the noodle bowl.
7. Heat up the skillet and add 1 teaspoon vegetable oil. Add the carrot and stir-fry for 20 seconds. Add the red bell pepper strips and stir-fry another 20 seconds. Transfer to the noodle bowl.
8. Heat up the skillet and add 2 teaspoons vegetable oil. Add the beef and mushroom mixture and stir fry for a few minutes until the beef is no longer pink and the mushrooms are softened and shiny. Transfer to the noodle bowl.
Mix and serve:
  1. Add 1 minced garlic clove, 1 tablespoon soy sauce, 1 tablespoon sugar, ½ teaspoon ground black pepper, and 2 teaspoons of sesame oil to the mixing bowl full of ingredients. Mix all together by hand.
  2. Add the egg garnish and 1 tablespoon sesame seeds. Mix it and transfer it to a large plate and serve.

Spicy Stuffed Cucumber Kimchi ( Oisobagi kimchi 오이소박이 김치 )


One thing I love about Jaya Grocer is they have things I like which I can't get anywhere else. Imported Australia beef - grain fed..very tender and which are great for my korean dishes :p  Herbs and baking stuff like aluminium free baking powder which I can't get from my usual baking shop. Ok, sorry I have digress again...back on track on this delicious, mouth watering spicy stuffed cucumber kimchi.  I bought 2 packs of mini cucumber from Jaya Grocer ( now you know why my mind trails back to Jaya Grocer that deserved a mention in my blog )  This is not a advertisement post.

I am a great fan of Maangchi and I love most of her recipes and today I am sharing her mouth watering flavor packed side dish or banchan as it is called in Korea - Oisobagi Kimchi which means Spicy Stuffed Cucumber Kimchi. This is a keeper and I can't wait to share with you .... appetizing and easy to make.  A healthy side dish which even my meat eater at home loves it and asked me to make more.  I made a batch and kept them in air tight container, serving them as side dish at every dinner meal.  Try it to believe me :) After a week in the fridge, the cucumbers are still crunchy and the flavors deepen even more...a delightful side dish.

Spicy Stuffed Cucumber Kimchi - Maangchi

ingredients:

4 4½ inch long mini cucumbers
2 tbsp salt
1 cup Asian chives - cut into 1/2 inch length
4 cloves garlic - minced
1 medium carrots - cut into thin matchsticks - about 1 cup
1 cup of onions- sliced thinly
1/2 cup hot chilli flakes
3 tbsp fish sauce
1 tbsp sugar
1/4 cup water
1 tbsp toasted sesame seeds

Method:

1.Wash the cucumbers. Make pockets out of them by slicing them twice lengthwise at right angles, ½ inch from one end so the cucumber quarters are still connected to each other at the end.

2.Put them in a big bowl, and sprinkle and rub them with salt inside and out. Let them sit for 10 minutes on the kitchen counter, and then turn them over so they’re evenly salted. Then turn them over and let them sit another 10 minutes.

3.Rinse the cucumbers in cold water a couple of times to remove excess salt. Drain and set aside.

4.Combine buchu (Asian chives), carrot, hot pepper flakes, fish sauce, sugar, and sesame seeds in a large bowl. Mix well with a wooden spoon.

5.Stuff the seasoning paste into the cucumber pockets. If you have sensitive skin, you can wear rubber gloves for this because the paste might irritate your hands.

6.Serve immediately as a side dish for rice, and keep the leftovers in the refrigerator. If you prefer it to be fermented a bit more, let the container sit at room temperature for a couple of days until it smells and tastes sour. Then put it into the fridge. Serve cold.

Prawn Omelette With Crispy Edges

If I can have an egg a day, I will surely have it everyday in my diet. I love them poached, steamed,  as half boiled or as omelette. But I am only allowed to eat them twice a week.  Wild boar loves omelette and   Today, I am sharing a simple and yet delicious omelette recipe, Prawn Omelette. There are many variations...you can either make a classic one or with fillings.  Our favorite is prawn omelette. 

When I am tired or too lazy to cook anything elaborate and too lazy to eat out :p, I will just cook this prawn omelette to either go with bread or plain rice.  This recipe doesn't need much preparation.  I always have shelled and deveined prawns ready packed in small tupper for each cooking in the freezer and thus this has made cooking prawn omelette even easier for me.  You can seasoned the prawns  10 mins before cooking, with just salt and pepper and a pinch of sugar. The rest is just slicing thinly garlic, red onion, italian parsley and for some heat, bird's eye chilli.  Beat up 3 eggs with 1/2 tsp of maggi seasoning and you are on the go to cooking the most flavorful prawn omelette :)

ingredients : 3 eggs, 1 red onion, 2 bird's eye chilli, sea prawns,
italian parsley and garlic

Prawn Omelette With Crispy Edges

Ingredients:

120 gm sea prawns - shelled and deveined - seasoned with a pinch of salt,pepper and sugar
1 red onion - sliced thinly
2 cloves of garlic - sliced thinly
2 bird's eye chilli - sliced thinly
1 sprig of italian parsley - coarsely chopped

3 eggs - beat up with a 1 tsp of  maggi seasoning

1/2 tbsp of rice bran oil

pan size 12 inch diameter or bigger for an omelette with crispy edges

Method:

Heat 1/2 tbsp of rice bran oil on a non-stick pan, saute the seasoned prawns till cooked, add in onions, garlic, chilli, italian parsley and stir fry for a few seconds.  Dish up and keep aside.

Pour in the beaten egg , add in the cooked ingredients evenly around the surface, swirl the beaten eggs till it covered the whole pan area . The edges will be thinner than the center part. Once the egg has set on bottom, flip over the cook the other side till both sides are cooked through and edges are crispy and golden brown.

Serve with bread or with rice.

Joe And His Newly Acquired Guitar

Joe is Wild Boar's buddy and they have been hanging out together for years now. He is also my hair stylist and very much a musician at heart. He loves music and each time we meet up, music instruments will be one of the topics. And not only he acquires and changes guitars and musical assessories often, he is also an antique collector.  

Joe acquired a Gretsch guitar recently and he can't wait to show us his lastest 'toy' . He sold off his previous one to one of his friend.  He gave us a brief introduction to this renowed brand Gretsch . The Gretsch name, according to him, can be easily found, thanks to their dedication in producing superb tone and professional craftsmanship. And their guitars are made from the finest materials and components.  He said Gretsch guitar has graced the hands of many famous influential artists such as Billy Gibbons, brian setzer , Chef Atkins and Tim Armstrong . Haha, I just rolled my eyes when he said that.  I suppose it makes him feel famous too :p  Gretsch is well known and praised for their lineup of many other musical stringed instruments and accessories. Oh well, I guess he knows his stuff well since he is such a passionate musician.  After hearing so much about his lastest guitar, I can understand why Gretsch will forever remain a go-to coice amongst expert musicians and amateur enthusiasts alike.

We enjoy being in his company for Joe is such a cheerful person.  When we are surrounded by him, his cheerfulness rubs on us too :)  It is good to be with people who are music lovers and love making music. We try to be with people who has positive energy and Joe is one !  He is a dreamer too :)

Beer Battered Silver Baby Pomfrets



I am so addicted to Pharmaskitchen 's Beer Battered Anchovies that I used his batter recipe again :) This time not for pumpkin flower fritters and not for fresh anchovies but for silver baby pomfrets. Wow....the beer batter is really good for the baby pomfret.  So crunchy that it is best accompaniment for chilled beer.  Wild Boar and I had this for our afternoon light snack.  Having chilled beer and these crunchy beer battered baby pomfrets on a hot weather is truly a blessing :)  

I am now waiting to get hold of fresh anchovies , then I can experience Pharmaskitchen's recipe using fresh anchovies.  Keeping my fingers crossed that I will be able to get the fresh anchovies soon.  In the meantime, these baby pomfrets will do :)  Love love the beer batter and I should share what is good :)

Ingredients:

7  silver baby pomfrets

Pumpkin Flower Fritters


I have been wanting to make fritters from flowers...I have seen people making zucchini fritters and when I googled and found that pumpkin flowers can be make into fritters too , I was jumping with joy.  In the course of excitement and in my hurry to harvest the newly blooms, I forgotten that I should check the gender of the flowers.  I am no gynecologist okay.  Plucked them off and happily heads toward the kitchen.  I removed petals by petals and soaked them in water to remove dust and dirt.  No pesticide as it is homegrown , thus I soaked them for just 5 mins.  After I removed the petals, I noticed that I have plucked the female flowers......grrrr I should have hand-pollinated the female flower so that I get the pumpkin and eat only the male flowers. 

Anyway, to cut the story short, I use d the batter recipe shared by Pharma's Kitchen.  It turned out fabulous...the fritters turned out crunchy and stay crunchy for quite a while. His batter recipe is the best thus far.  Simply loves it and I will use his batter recipe again. Do hop over to his blog for more delicious dishes. 

I used Rice Bran Oil for frying the fritters as it is healthier and Rice bran oil is the oil extracted from the hard outer brown layer of rice after chaff (rice husk). It is notable for its high smoke point of 232 °C (450 °F) and its mild flavor, making it suitable for high-temperature cooking methods such as stir frying and deep frying. It is popular as a cooking oil in several Asian countries

I will be planting more kabocha for its flowers now that I know it tasted so good

Pumpkin Flower Fritters

a few Kabocha flowers-  keep the petals only

batter ( adapted from Pharma's Kitchen )
5 tablespoons of Rice Flour
2 tablespoons of Glutinous Rice Flour
1/2 teaspoon of Baking Powder
Salt
Pepper
Smoked Paprika Powder * I use chilli flakes

1/4 can of Beer or water if not using beer

Rice Bran Oil  -  2" of oil in a small deep- pan

Method:

Soak the kabocha flower petals in water for 5 mins.  Drain off water and lay the petals in between two layers of kitchen paper towels for 5 mins or until water is absorbed into the paper towel.

Mix the dry ingredients for batter till well combined.  Slowly add in the beer or water till you get the right consistency ( not too thick nor too watery - as long as the batter can stick onto the petals and not drain off )

Heat rice bran oil , use a wooden chopstick to test whether the oil is ready for deep frying. When you see bubbles around the chopstick end, it is ready.

Gently coat the petals and drop in gently into the hot oil, one at a time.  The moment it turned golden brown, scoop out and drain on paper towels to take off excess oil.

Independence Day - 4th July

My brother and his family are looking forward to 4th July.  He will be closing his restaurant for a week so that his chefs and workers can spend time with their family too. Wow, that is what my brother and family are looking forward to.  Out of curiousity, I went to check their website and found that for over a decade, they have been serving the music community of of eastern Pennsylvania and even western New Jersey. They are located conveniently between Philadelphia and Trenton which is a ston's throw from the Langhorne area malls and shopping centers and within a few minutes' drive of all major local highways.  They have experienced staff members who take great pride in their impressive showroom as well as their own knowledge, which gives them the resources they need to help customers find what they are looking for whether they are a beginner or a pro.  Now I understand why my brother who lives in New Jersey choose this Langhorne Pennsylvania Guitar Centers for the family.  Happy Independence Day and have a great time with your family and friends !
