Tofu And Snow Fungus Soup















I love the clarity of this soup.  It is a double boiled chicken soup .  The soup is made up of chicken stock,  some goji berries , chinese red dates and a few strands of ' pao sum ' roots added for some herbal fragrance.   It is easy to whip up as long as you have the chicken stock ready.  Just double boiled the chicken stock and the herbs ingredients for 40 minutes. After which, add in the snow fungus , silken tofu and oyster mushrooms and continue to double boil the soup for another 20 minutes.  Add a pinch of sea salt to the soup before serving.   To prepare the chicken stock, I boiled a whole chicken ( remove skin ) and 1.5 liters of water in a slow cooker for a few hours.  Strained the chicken stock and store them in air tight container and keep in the freezer . It can keep for a month , and I find it very convenient to have ready stock at home. This soup is delicious !

Spinach In Oat Porridge















I have this twice a week for dinner.....something healthy and Wild Boar disapproved saying why in the world do I need to skip eating rice when I am not a diabetic  LOL!   he will grumbles and complains that it is not good to eat this when I am not sick.  He said oat porridge reminds him of sick people !   BUT he doesn't know how delicious this is !  You can serve oat porridge with steamed fish and some stir fry veggies of your choice.  For me, I like to add baby spinach into my oat porridge .  Two in One concept, less one plate for washing :p  I am eating for the next few days reason being , I will be meeting up with Piggy Jo this coming Friday and will be spending a few days with her and that means eating out most of the time ....so now you know why I have to go on a diet till I meet up with her LOL!

Grilled Fish Wrapped In Banana Leaf



It has been a long time since I last grilled fish on stove .  My Muslim colleague gave me some banana leaves harvested from her garden and thinking that since I love cooking, these banana leaves would be useful for me :)  I told her,  " yessss it is useful. I am going grill fish wrapped in these leaves " .  I normally steam the fish plain or with plum sauces but grilling them in banana leaves sent my salivary glands in full force :p  A great dish for buka puasa and I see a lot of grilled tilapia being sold at the Stadium food bazaar :)   Smell good too.  What I did was to rub curry powder and enough salt on the fish.   Wrapped the seasoned fish with the banana leaf, big enough to cover the whole fish.   Heat a tava or flat skillet that is used to cook the chapati , till hot.  Place the banana wrapped fish on the flat skillet and grill 6 mins on each side on medium heat..   Serve with tamarind chilli sauce with lots of onions  ....Yummy !

Open- faced Corned Beef Sandwich


We normally have sandwiches for lunch during the weekend.  Open-faced sandwiches would be ideal for lazy people like Wild Boar... LOL!  He whipped this up for us last Sunday after the kids water games.  Too tired and too hot to eat out , we went straight home to rest and after an hour of rest, WB opened a can of corned beef and cooked it with cabbage and red onions and chilli as a spread for our open faced sandwiches.  Simple and yet delicious.  We spread the corned beef over a slice of bread and sat in front of the TV watching our favorite movie from Astro.  We scheduled our movies for the weekend by recording them and replayed them when we are free to watch them like last Sunday. Chomping down the sandwiches as we watched the movie " While You Were Sleeping " starring Sandra Bullock and Peter Gallangar.  This is what I called Bliss.  This is how we spend our Sunday afternoon.  Movies plus food makes a blissful Sunday .

for he simply put everything in the non stick pan
and cooked them over low heat till the onions and
cabbage has softened.   No seasoning required as
the canned corned beef is well flavored.

Deep Fried Turmeric Chicken
















I dislike using turmeric powder for this dish...I prefer to use  fresh turmeric as it has a stronger fragrant and the fresh orangey color make it more appetizing. Turmeric has a peppery, warm and bitter flavor and is best known as one of the ingredients used to make curry, it also gives ballpark mustard its bright yellow color.  Turmeric comes from the root of the Curcuma longa plant and has a tough brown skin and a deep orange flesh. Turmeric is used as a powerful anti inflammatory in both Chinese and Indian system of medicine. Turmeric was traditionally called " Indian Saffron"  because of its deep yellow-orange color and has been used throughout history as a condiment , healing remedy and textile dye.  For this reason , I used them often in my cooking and even planted some in my small garden :) The leaves are used in rendang recipe .  I managed to harvest some for cooking this dish. This dish reminds me of my confinement period.  My grandma cooked this dish for me during my confinement :) Love this and last week, I could not help making this with Wild Boar's help.  He was annoyed with the yellow stain on his trotters  hand ...LOL!  I bet you he won't do this for me anymore unless I get him the disposal gloves to wear while he pound the turmeric for me :)

White Oyster Mushroom Fritters
















These are really great finger food.....addictive and you won't be able to stop after the first bite.  Crunchy on the outside and moist soft on the inside...how could it be possible ? yet it is true :)  The batter is made up of rice flour, potato flour and all purpose flour , a pinch of sea salt to taste and a dash of white pepper and chilli powder ( I used the Dominoes pizza chilli flakes  :p )  I saw a lot white oyster mushroom selling in Jusco and could not resist bringing back a kg pack home.  I am a shroom lover so what not to expect of me....lugging back a pack that will last me a least a week.   I stored them in air tight container and keep in the fridge...it can keep till a week :)

Almond Crusted Meat Patties

WB loves meat patties especially nuts crusted ones :)  So I taught him how to make some for himself.  My elbow tendon is still hurting when I bend the fingers :(   But whatever it is a blessing in disguise.  WB can cook better now especially finger food like the meat patties he made for himself.  I gave him some of my almond slices which I kept for baking and he is a clever boar ...first time making this and he passed the test ! Our Pearl Anniversary - July 2, 2013






Today is a special day, Wild Boar and me celebrated our Pearl Anniversary....yesss...30 years of wedded bliss and we pray with God's grace many more to come :)   

We took this vow 30 years ago and we renewed it again today :p  * with my tennis elbow and frozen shoulder...this vow will surely benefit me.... LOL!

 " I ,WB , take you Elin to be my wife , to have and to hold from this day forward, for better or for worse, for richer, for poorer, in sickness and in health, to love and to cherish ; from this day forward and until death do us part "
