Mushroom & Salad Sandwich


















You know, I am always very happy when I eat healthy :p but the times when I indulge in sinful artery clogging stuff, I am happy too LOL! Happy for a moment but later regret eating them :p  I made some homemade wholemeal sandwich bread for WB a few nights ago.  With some leftover slices before they go dry,  I decided to make sandwiches out of them for my dinner.   I made a salad of romaine lettuce, red onion rings and tomatoes with  just red wine vinegar and mixed herbs dressing...the salad turned out  great for my sandwich.  I stir fry some fresh button mushrooms and garlic and black pepper...the perfect combo for my sandwich meal.  Love it !  Mushrooms and salad as fillings for my homemade sandwich bread.....the remnants of salad, I served as a side with fresh local strawberries....Now you tell me, is this healthy and delicious enough ?  The answer is... it was a delicious and healthy meal for me and the after effect is one happy soul.... LOL!
























First apply a layer of  French mustard with grains on one slice of bread, then  top with the seasoned salad of romaine salad leaves, and top with another layer of stir fry fresh button mushroom slices and end with another layer of salad.  Cover with another slice of bread and it is ready for serving.   C'est bon and c'est delicieux !!!  :)

I have been deprived of fruits and veggies since coughing and 
now is pay back time LOL!  eat as much as I want !

  1. Mushrooms, mushrooms... We can't get those imported fresh ones here. Even if we can once in a blue moon, already rotting away, not good anymore. Sigh!!!

  2. yum!! i can have this anytime of the day, meatless is still fine for me :) hope you are getting much better now!your salmon and mushroom dish looks good too, never tried black rice tho:)

  3. Wow, this is really healthy! I feel guilty for not eating healthy just by looking at your yummy sandwich! Ooo I bet the sautéed mushroom gives it a full body flavour and wonderful texture, yums! I like...but I doubt my hubby will agree to eat this, haha!

    A few years back I had a cold that had a cough that followed. I had three bottles of cough mix in three weeks. When the bottle was finished, no change to cough. After three weeks I gave up. I made my own cough-cure.
    A few slices (3~5 thin slices) in a heatproof mug. Add a couple of tablespoons of water and microwave for a minute or so - watch the water in cup - the ginger makes the water bubble up. Add a teaspoon of clear honey and top with hot water. You can also add slice of fresh lemon if you are still suffering from a cold. The longer the ginger sits in the water, the stronger and more fiery the taste. I didn't particularly like ginger back then, but drinking this ginger, honey drink around 3 times a day soon cured the cough that cough medicines did not touch.
