Steamed Sponge Bun Sandwiches


















I have a weakness for fresh mushrooms and I add them to my meals very often. At least twice a week.  Well, you can say that I am a shroom woman :p  Fresh white and brown button mushroom are my all time favorites. It is so versatile , you can cook them in whatever style you want..grill, stir fry, bbq, steam, braised or even make them into soup...no matter how they are cooked , they are delicious and today, I want to share with you this delicious simple stir fry fresh mushrooms with leeks , yellow bells with a sprinkle of mixed herbs and black pepper and the magic sea salt.   Served them as fillings for my steamed flat bun...two words DELICIOUSLY HEALTHY !   This is what we had for our Saturday brunch ! :)

















We don't eat healthy all the time...we do pamper ourselves to some sinfully rich food too but most of the time, we practice the motto   ' always moderation in anything '  :p  First I steamed some flat buns...I took the recipe from the steamed sponge cake to make this flat buns ....cooking just need some creativity at times.


















I whisked the eggs with sugar till light and fluffy, add in vanilla and gently fold in  the flour and scoop three or four tablespoon of the batter into a flattened cupcake liners.  Steamed them in a boiling steamer for 5 mins. Take them out and they ready to be served as sandwiches with the fresh mushrooms fillings !  Simple and easy as ABC yet tasted heavenly....mmmmm yummy !





















This is a light and easy food that I love to indulge more often.  The steamed buns are spongy and light.  Sandwiched with the stir fried mushrooms and some coral lettuce....a perfect meal for a brunch !  For busy people this is good meal...fast and easy to whip up !



This so yummy...the fillings is to die for....love the spongy texture of the fresh white and brown mushrooms and the flavorful herbs  blends well with the mushrooms. The add on of leeks and yellow bells makes the dish more aromatic and tasty.  A perfect filling for my steamed sponge buns :)




Steamed  Sponge Buns Sandwiches

Steamed  Sponge buns
makes 5  pieces

Ingredients:
2 eggs
40 g sugar
1/4 tsp vanilla essence
75 g all purpose flour

Method:

Whisk eggs with the sugar until fluffy and light, add in the vanilla essence, Gently fold in the flour till they are well incorporated into the egg and sugar mixture. scoop three or four tablespoon of the batter into a flatten cupcake liners.  Steamed them in a boiling steamer for 5 mins. Take them out and they ready to be served as sandwiches with the fresh mushrooms fillings ! 


Mushroom Fillings

ingredients :

fresh white and brown mushrooms - cut into slices - amount depends on individual
yellow bell - cut into strips
leeks- cut into thin  slices diagonally
garlic - chopped 

mixed herbs
sea salt
ground black pepper
1 tablespoon grapeseed oil

Mehtod:

Saute the garlic with grapeseed oil till fragrant. Add in the mushrooms , yellow bells and leeks and stir fry till cooked. Add in herbs, sea salt and black pepper. Stir fry for a min and dish up and serve as fillings for the above steamed sponge bun.

  18. I am just amazed that you can steam buns, I know its done, but it still amazes me! What a delicious sandwich with those lovely mushrooms, I too adore mushrooms, they go so well with so many dishes, but I have never thought of them as the star of the sandwich!
