This recipe was given to me by a muslim colleague who is a close friend of mine. She will be celebrating the Hari Raya Puasa this coming Sunday. Rejoicing after 30 days of fasting. And we also celebrate together with them…the One Malaysia concept :p :))) lots of rendang, lemang, ketupat and all the yummy cookies....looking forward to all the open house parties!
This is her famous lychee jelly pudding which she will always bring for our Raya party and I am so glad when she shared her recipe with me. Without waiting further I made them yesterday for the Piggies are on their way back for the 2nd sem break….yay two whole weeks with them and thus the baking craze is on…now is the time to bake new recipes, for the tasters are back home….stay tuned for more bakes that I have been itching to try out :p
This jelly pudding is very delicious and it is neither too soft nor hard. The texture is between a pudding and jelly. The milky lychee flavor is subtle thus you can eat really non stop. The Piggies will have a good dessert , jelly pudding and their favourite rich chocolate cake will be served after dinner tonight. Ain’t they blessed to have this super Momsie preparing their favourite dishes and desserts ? :) Put it this way, I am actually the blessed one to have them as my Piggies …if not who is going test out my bakes! Whether it is a success or failure…they will have to gobble down LOL! (“,)

I love this lychee and milk flavored chilled jelly pudding

Lychee Jelly Pudding
Ingredients:
I pkt of agar agar strips ( 34 gm ) – soaked in water till soft
1600 ml water
1 3/4 cups of castor sugar
1 tin of lychee – take out a few for deco
the rest blend into a puree and keep the syrup water
1 tin of evaporated milk
4 eggs – whisk it and keep aside
1 tbsp of butter
a pinch of salt
2 tsp of vanilla essence
Preparation:
Boil 1600ml of water together with the tin lychee syrup water . When it boils add in the softened agar agar strips and boil under medium low heat . When the agar agar and sugar has dissolved, add in the evaporated milk , stir till well mixed then sieve it once for any sediments before adding in the blended lychee puree. When it is ready, add in a pinch of salt and vanilla essence . Off the fire and let it cool down for 5 minutes before adding in the whisk eggs and stir till well mix . Add in the butter last and stir again till the butter has melted. Pour into pudding molds or ramekins and leave it to set in the fridge for 2 to 3 hours. Unmold the jelly pudding and decorate with the lychee fruits on top and served it chilled.

Hello,thanks so much for sharing this wonderful recipe! i tried last weekend n it tasted great! but i m jz wondering what happens when u add in the whisked eggs? for mine, the surface was all bubbles n unsmooth. is it meant to be this way? or hv i whisked it too much? and also, how long shd i soak the agar-agar strips? cos mine didn't dissolve totally (hehe) and so i had transparent designs on my jelly.
