Appel Pannenkoek - (Dutch Apple Pancakes With Caramelized Sugar)


During the Ramadhan month ,the Muslims will observe their 30 days fasting and whereby our cafeteria will be closed during this time. So this Momsie will have to pack her own breakfast and lunch :p I have been taking oats for breakfast daily and is looking forward to something different , and this morning I woke up at 5.30am just to prepare this delicious and healthy apple pancakes for my breakfast. Food is more important than sleep now or I have to fast with my muslim colleagues :p

This Dutch Apple Pancake with caramelized sugar is from Ellie of Almost Bourdain and I have been wanting to try it out the moment I set my eyes on those mouthwatering pancakes pics from her blog and this morning I managed to get up early to prepare it and it was worth it. This is so healthy and refreshing with the caramelized tangy green apples with cinnamon flavor as topping! DELICIOUS is one word to describe this Dutch pancake. A simply light and easy pancake for the young and old. I love it and would like to thank Ellie of Almost Bourdain for sharing this wonderful recipe on her blog. I love her blog . Do hop over to drool on all her bakes :))) It makes me happy even if I don't bake them LOL!

Even Daddy could smell it from the bathroom :p His smell senses are really sharp LOL ! The sweet aroma of cinnamon flavored caramelized apple pancake really makes one hungry and I tucked in one before I left for the office :))) Yup, I am a fast worker, cooked it, photoshoot it and managed to tuck in one all under an hour :p

Appel Pannenkoek / Pannekoek - taken from Almost Bourdain
(Dutch Apple Pancakes with Caramelized Sugar)


Ingredients:

1 cup (200g) flour
½ tsp baking powder
a pinch of salt
2 eggs
2 apples(Granny Smith)
lemon juice
caster sugar
cinnamon sugar
butter

Method:

Peel and core the apples and slice them thinly. Turn them in lemon juice so they retain their color.

Combine the flour with the baking powder and salt, and add enough cold water to make a thick batter. Stir in the eggs.

Heat a little butter in a non-stick pan and spoon in the batter.

Immediately arrange the apple slices like tiles on top of the pancake. Sprinkle with sugar and cook until the pancake is brown.

Using a dinner plate or pot lid, carefully turn the pancake over so that the apples cook and the sugar caramelizes.

Turn once again, sprinkle with cinnamon sugar and serve hot.
