Apple Roll


Never never try baking when you are watching a drama series . The chances of getting the cake or bun burned is 80 % :( That’s what happened last night, I wanted to try out another Japanese bun – Apple Roll this time. Really disappointed with the burnt surface otherwise the apple roll was perfect . Came back from work, cooked dinner and while waiting for Daddy to be ready for dinner, so as not to waste time, I quickly get the dough done. And while we were having dinner, the dough will be proofing in the oven. See , how well organized this Momsie is :))))





Piggy gal does the washing of the plates, while I do the apple roll. Hmmm…frankly speaking I suck when it comes to either rolling a swiss roll or a bun roll :) had a hard time rolling the apple roll but eventually managed to get it done. Since this is the first time trying out this recipe, I was quite happy with the result…meaning I managed to get it cut into 8 equal parts of 2 inch length . Placed them into a well greased pan and let it proofed for another 30 minutes the 2nd time.


While waiting for the second proofing , I switched on the idiot box to watch the Hong Kong drama series “ The Brink of Law ” . Paused the show for a second and put the ready rolls for baking. Set the timer and sat down to continue watching the drama. If I were not so engrossed with the drama, I would have checked the oven to see how the Apple Rolls were doing, but alas, I was so taken into the drama that I had forgotten to check the rolls and when the timer went off, I opened the oven door and to my dismay the Apple rolls were staring at me with burnt skin ! Lesson learned for the night. Though the surface were burnt but the inside remained soft and fluffy and the caramel apple slices were tangy- ly good and not burnt. Really disappointed with the burnt surface, otherwise the apple roll was perfect . This is another Japanese bun to be recommended to my readers. The apple slices complemented the rolls well.

Apple Roll ( translated from this website)

Ingredients:

170 gn high protein flour
40 gm low protein flour
6 gm yeast
42 gm sugar
2 gm salt
11 gm skim milk
21 gm unsalted butter
42 gm egg
92 gm water

Apple fillings ( caramelized it)

1 apple cut into slices
40 gm sugar
2cc lemon juice
100 cc water


Method:

Knead dough like normal bread making. Flatten dough on a greased baking pan and cover with cling wrap. Leave to rise till double in bulk (50 mins) Then roll thin and put the apple filling on the surface of the dough sheet. Leave 1” around and brush the edges with water. Roll into a roll and cut into 6 ( 8)pieces equally. Place them in a greased round baking pan and bake at 180º C for 20 mins.

  10. @ alis : Yup, it was the surface that got burnt but I used a knife to trimmed it off and it tasted perfect :)

    @ Pearl: It is a Japanese bun but I don't think it is traditional though :) Yup I cut off the burnt part. It should have a crusty top though :))

  11. LOL, I can totally relate when you mentioned that your bread was burnt because of watching drama, that happened to me many times too! I think your apple roll looks really yummy, I have to give the recipe a try one of these days. :-)

    Yup, I preferred the apple in thick slices so that as you bite into the roll you get the crunch as well :))
