Strawberry Yogurt Bread

Yogurt Bread again???? Haha.... Yup, I think one will never get sick of it but will yearn for more . It is light and cottony like , goes well with rich creamy ice-cream...just the thought will make one salivates :)))

Instead of using Mango Yogurt , I used Strawberry Yogurt coz there was one left in the fridge. Now, that the ‘Piggies’ have gone back to college , I took the opportunity to look through the fridge to see what is left behind coz many of these stuff I bought for Piggy gal to snack on while back home for holidays. She loves yogurt-ty stuff so have to check the expiry dates :) Since the Piggies are away in college, Daddy and Momsie eat simple , thus leaving Momsie plenty of time to indulge in her baking and BLOGGING !!! :)))

Since this raving craze over bread making is still on for me, and Daddy loves to eat this yogurt bread , I took the opportunity to bake bread for my lunch the next day and Daddy can have his for breakfast.

The Mango Yogurt is still the best for me. The nice , sweet aromatic fragrance of mangoes fills the air as baking takes place in the oven.

Soft and light , cotton- like and yet it is not dry.....yummilicious

Chicken Puff Squares

I have some puff pastry and some roasted chicken breast left in the fridge. So instead of letting them sit in the fridge, I made some chicken puff squares for Daddy and myself...hmmm we can't indulge too much of this sinfully delicious stuff but once in a while I guess it is okay... I made two only haha....to control the gluttony instinct in us (",)

The recipe

Ready to use Puff Pastry from supermarket
Rolled pastry to 1/8” thick and cut into 4” X 2" rectangular

Chicken Mornay Filling
Ingredients for Mornay Sauce
50g butter
50g flour
750g full cream milk
Salt to taste
½ tsp ground black pepper
1 egg yolk
100 g mozzarella sauce

Method:

Melt butter in a pan, add flour and fry the flour till well incorporated into the melted butter. Add in 750g full cream milk and keep stirring till the sauce is thick and not lumpy. Add in salt, pepper and the mozzarella cheese…keep stirring until sauce is smooth. Off the heat and let the sauce cool down , stir in the egg yolk last. Leave aside.

Chicken

1.5 chicken breast – Boil, shred the meat
1 tbsp fresh parsley
½ tbsp corn oil
2 tbsp chopped shallot
1tbsp lemon juice
Salt, pepper to taste

Mixed the above ingredients together in a bowl and leave aside.


Method for making Chicken Puff Squares
Preheat oven to 200C

On a piece of 4” X 2" rectangular pastry, place some chicken filling with the mornay sauce on one half side of the pastry and fold over . Crimp the edges with a fork.
Repeat till all the pastry squares are used up .
Place on baking pan and brush with egg wash and bake 30 mins over moderately high heat.

Cream Cheese Bread

I would like to thank KWF for her generous nature in sharing her experiences in bread making plus wine making :) Thanks to her , I am able to bake the Yogurt bread and my family loves it and now through her recommendation, I have tried out her Cream Cheese Bread and it came out soft too except that it is a slightly compact ( due to my own fault ) the dough should be kneaded a bit longer and I have not found the right baking temperature yet for this cream cheese bread…haha like I said every oven is different * head shaking** time to get a good oven . Noticed the slightly burnt top…most probably the oven is too hot so I need to reduced to 160 C the next time I bake it.

My Ariston oven died on me 2 years ago. The one I am using at the moment is a small table top oven…free gift when purchasing the air-cond (“,) . There is no Ariston dealer in the town I stayed…have to order the oven from KL which will cost a bomb plus transport….haizzz… have to shelf it for the time-being coz Piggy boy just entered college. I need more moolahs… :))) I am crapping again….but back to the Cream Cheese Bread this is one fantastic bread that I think you should try it out if you are a bread lover or a die-hard baking enthusiast like me .

I am going to bake it again coz I love this bread…it has a slight cheese fragrance and the texture is soft . I ate it this morning for breakfast and it is still soft. It is a to-keep recipe. A big Thank You to KWF for sharing this beautiful Cream Cheese Bread. Btw, I used my normal Kenwood Mixer with the dough hook to knead it and not a VM .

4th Baking Lesson

I had my fourth lesson at baking last Saturday and I still enjoyed every minute of it. And each time I am there, these thoughts will breeze through my mind “ Will I be able to remember every steps she demonstrated or can I bake as well as the ‘sifu’ ??? Or at least 80% as good as her…. And I tell myself… “ I can do it, if I come home and practice it ”

She taught us 1) Philippine Moist Chocolate Cake
2) Boiled Fruit Cake with Prunes
3) Chicken & Crab Mornay In Pastry Parcel

And we get to take home, a piece each (“,)

Dim Sum - * Pointing to the Heart **

“ While happiness doesn’t come on a plate, dim sum does ”

Dim Sum means “ dotted heart " or “ pointing to your heart " in chinese. But lately people prefer to call it Tim Sum meaning “ touched the heart ” Dim Sum is labelled as ''bad for the heart'' due to ''hidden fat'', but we Chinese still enjoy it. Eat first as the saying goes and deal with it later…. * wink* * wink* Well , it goes well with a cuppa of green tea though.

Dim sum conjures tiny morsels of Chinese tea snacks in bamboo baskets that are popularly eaten at breakfast or lunch. The most popular ones are Steamed Sui Mai, Steamed Har Gao ( prawns dumpling), Radish Cake, Chee Cheong Fun , Char Siew pau, Egg Tarts , Wu Kok or aka Taro Puff and not to forget the famous glutinous rice aka Lor Mai Kai. There are many types of dumplings which are so daintily made and attractive especially the cyrstal clear dough skin prawn dumplings. Nowadays, they have come out with lotz of different dainty looking dim sum snacks.

Piggies love to eat dim sum. Eating dim sum is heavenly . Making it is tedious , therefore I tell you do not grumble about the cost of dim sum …it is worth paying for. We indulge not often coz Daddy complains it is expensive …he rather eat something more filling even if it is expensive ..haha… ( but he doesn’t understand that it is pricey coz of the amount of work involved ) .

I hope to learn from my sifu " Hongkong Dim Sum" one day ....just the thought of it is enough to excite me and set my adrenalin working overtime (",) To think of it , Momsie is a glutton and hungers for skill in baking ,cooking and now thinking of making dim sum...keeke..eek. I always believe in one principal...one is never too old to learn anything , for acquisiton of knowledge is timeless and ageless.

An Appetizing Delicacy - ' Cincalok ' Sauce

Wow…it’s been quite a while since I last ate this appetizing delicacy . ‘ Cincalok ‘ is specially prepared from traditional recipe and originated from Malacca. The shrimps are soaked in salt water for a period of time. It is sold in bottles of 250 gm . I love the smell of the preserved shrimps….haha only Piggy gal and Momsie love this appetizing delicacy. The guys won’t touch it at all…..* sighz** What a waste ! That’s the reason why I seldom served it for dinner. But today, Piggy gal and Momsie yearned for it…….it added oomph to our food .

It compliments well with fried/ BBQ fish and meat. I can eat 2 bowls of rice if I have this for dinner ….it whets your appetite . Besides this, you can use it to fry slices of lean pork ….a dish I will die for. Will share the recipe of this dish ( Cincalok Fried Pork ) at a later date.

Ingredients used for this appetizing delicacy.........

3 tbsp ' cincaluk '

8 shallots - thinly sliced

7 birdeye chillies - sliced

2-3 limes - squeeze juice

Method:

Mixed all the ingredients together and chilled it before serving

This appetizing delicacy can be eaten with plain rice

or as a sauce eaten with BBQ seafood or meat

Multi-Grain Butter Cake

Ooops..... I read wrongly, the recipe for this Multi-Grain Butter Cake !!! Instead of using A egg I used double As. Gosh, luckily it turned out nice but not as light as it should be. And it got burned on the top :( . After learning from the baking class I attended a few weeks ago, this was the first time I tried this out and how careless I was in using eggs of wrong grades. (",) Haha, age is catching up ..I guess :)

Steamboat Party

It is best to have steamboat when the weather is cold , especially during rainy season. I like having steamboat for family gatherings becoz it is the only time when we can talk and eat at the same time. While waiting for the food to cook , family members can chat and have a wonderful fellowship together. Though lots of work is involved in the preparations..especially if you are having the traditional pot using charcoal , I prefer having steamboat at home. It is more fun to have it at home than having it at the restaurant.

The raw ingredients for the steamboat( fish balls, meat balls, cuttlefish, beef slices, chicken slices, prawns, crabs , and a variety of vegetables ) must be fresh and the chilli sauce to go with it must be good. As for me , the fried garlic oil is a must. It goes well with the vegetables.

Last Sunday, we had steamboat for dinner. We had both the traditional charcoal pot and the electric one....* tom yam soup in one pot and ' yok chok chicken soup' in the other * :) There were seven of us and we had a jolly good time. My 'piggies' will be going back to college this coming Sunday * sobz, sobz ** am going to miss them terribly! haha...if I know them, they will come running back every Friday nite after their last lesson :)

' D ' for Desserts and Drools

Ooo … desserts are the most interesting part and I gave them a mizz. Haha…I tucked in too much oysters and too much salmon so I have to give dessert a skip. I ate some fruits and made myself ice-kacang with added ice-cream. Their ice-cream were made by the hotel chefs themselves. Very creamy and tasted fantastic. I enjoyed them very MUCHIE….heehee…like a small gal having her first taste of ice-cream.

There were a great varieties of cakes and some sweet delicacies but most of us gave that a skip. But I took some snaps for drooling purposes…* wink, wink ** Piggy gal enjoyed the food the most and I loved watching her tucking in the food hearty.
