Coconut Jelly



Besides baking buns and cakes , I also love trying out different types of dessert recipes for my Piggies to savour . I know , I know ….my Piggies are often mentioned in my blog, firstly it is partly becoz of them that my baking and cooking interest are cultivated. They love food and they are adventurous enough to try out my new recipes ! They are my greatest supporters whether the food turned out good or not. They are not juz my kids, they are my friends and partners in crime too ;p . They were the ones who continually give me the inspiration to continue trying out new recipes . I started this food journal blog basically for them, to drop by and take a peek to see what their Momsie has been cooking or trying out new recipes from the net , since the day they started college life. And today I have found many good friends who shared the same passion as me. Cook it, eat it and share it … will be my motto as of now :)



Back to this melts-in-mouth jelly. Until I read from CKLam’s lastest posting on Coconut Jelly that I remembered that I had tried making this awesome dessert some weeks back and the photos were still in the cam. I knew my Piggies love it…Piggies said that the texture was almost the same as the one bought in small tupper . Ooooh ….what a compliment ^ * I guess I am the type of person who will not rest well until I have succeeded in whatever I wanted done : )))))

The texture of the jelly is not the firm hard type…mine is wobbly nice and melts in the mouth type with the soft succulent coconut meat giving extra oomph to the dessert..one word to describe it... AWESOME !

Make juz enough for a day or two. Can’t keep long becoz it has no preservatives. An easy to make and yummy nice melts in the mouth dessert.


Ingredients:

coconut water from 2 young coconuts - scoop out the meat and keep aside
4 to 6 tbsp of sugar syrup with pandan flavor -
depends on your tastebuds
2 tsp of agar agar powder ( if you want it firmer
you can add a bit more of the agar agar powder )

Method:

Mix coconut juice , sugar syrup and the agar agar powder together and bring to a boil. Off the fire and sieve it before pouring into 8 ramekins. Add the coconut meat equally into the ramekins. When cooled, put in the fridge for at least 4 hours for it to be fully set . It will be slightly wobbly when you shake it. Serve in the ramekins only when ready to eat. It has to be in the fridge at all times.

  5. Young coconut juice will be the first thing I am going to drink when I get home. I like this jelly but its difficult to find this kind of young coconut here.
