Steamed Banana Muffins

Bought a comb of bananas from the market after work today, wanting so much to try out this recipe from my To-Do list. I have hundreds of recipe in my To-Do list :)))) and this one has been in the list for quite a while.

Steamed Banana Muffin sounds nice and is good for health. No butter involved and fruits are good for us especially bananas….plenty of minerals and vitamins (",) Easy to prepare and easily digestable , soft and moist…heehee good for the young and old. I know my Piggies would love them and since they won’t be back this weekend, I will post this up for them to DROOL here .(",)

this comb of ' Pisang Emas' costs me RM3.10 (",)


pour batter into muffin cups 3/4 full
a load can make 6 muffins

aahhh.... 6 yummilicious banana muffins waiting to be devoured :))

soft and moist, easy to digest
I mashed the banana coarsely so that one can
taste the fruit as you bite into the muffins
mmmmmm...mouth watering muffins....

Steamed Banana Muffins ( 6 muffins )

Ingredients:

150gm self-raising flour
1/8 tsp baking soda
200gm mashed bananas ( I used 4 ‘pisang emas’ )
100 gm castor sugar ( I used 70gm only)
2 eggs
75 gm oil ( I used corn oil )

Methods:
  • Sift together self-raising flour and baking soda, set aside.
  • In a mixing bowl, whisk together eggs and sugar till ribbon stage.
  • Mix in mashed bananas ( coarsely ) beat till well combine.
  • Gently fold in flour mixture and oil alternately, taking care not to deflate the eggs and sugar mixture.
  • Pour batter into muffin cups 3/4 full.
  • Steam over high heat for 15 mins or till cooked.

  5. this is a great receipe. I never try steaming banana muffin, only know how to bake banana cake. Definitely a better option as it is not so oily...thanks for sharing :)

    Btw, do I have to add in banana essence?

    No, I did not add banana essence as I prefer the natural scent from the ripe banana. The more ripe the banana the better :) This recipe is a keeper. Not oily and you need to steam it on high for 15 mins only. It is moist and yummy. Hope you too will enjoy this muffins when you make it.

    Yup, this steamed banana muffins is great in taste and the texture is moist and light. Great for all ages :) Try it and you will know what I mean. Have a great time with the bananas :))) I baked some bnanana muffins yesterday haha will post it up later.
